Bread dough

  • 3.5 cups cake flour (see notes for AP flour substitution)
  • 1 tablespoon instant yeast
  • 1/2 teaspoon salt
  • 1 cup whole milk, room temperature
  • 1/2 cup sweetened condensed milk
  • 1 medium egg
  • 2 oz unsalted butter, softened, at room temperature, cut into pieces

Egg wash

  • 1 medium egg
  • 1 tablespoon whole milk

Condensed milk glaze

  • 3 tablespoons sweetened condensed milk
  • 1 tablespoon unsalted butter, softened, at room temperature

Instructions

  1. Mixing & kneading by mixer – Combine all dry ingredients in a stand mixer, then add wet ingredients. Mix until cohesive dough forms. Add butter gradually and mix until smooth.
  2. Extra kneading by hands – Knead the dough on a floured surface until smooth and elastic.
  3. First proof – Let the dough double in size in a greased bowl for 1.5 to 2 hours.
  4. Shaping – Shape the dough into a cylinder and cut into pieces.
  5. Second proof – Let the dough rise in a baking pan for 1 to 1.5 hours.
  6. Baking – Preheat oven to 350F, brush dough with egg wash, bake for 35-40 minutes.
  7. Glazing & serving – Brush bread with condensed milk glaze when done baking, then let it cool before serving.

Notes

  • If using AP flour instead of cake flour, adjust the measurements accordingly.
  • Store bread in plastic wrap at room temperature for up to 3 days.
  • Leftover bread is great for making bread pudding.
