Bread dough
- 3.5 cups cake flour (see notes for AP flour substitution)
- 1 tablespoon instant yeast
- 1/2 teaspoon salt
- 1 cup whole milk, room temperature
- 1/2 cup sweetened condensed milk
- 1 medium egg
- 2 oz unsalted butter, softened, at room temperature, cut into pieces
Egg wash
- 1 medium egg
- 1 tablespoon whole milk
Condensed milk glaze
- 3 tablespoons sweetened condensed milk
- 1 tablespoon unsalted butter, softened, at room temperature
- Mixing & kneading by mixer – Combine all dry ingredients in a stand mixer, then add wet ingredients. Mix until cohesive dough forms. Add butter gradually and mix until smooth.
- Extra kneading by hands – Knead the dough on a floured surface until smooth and elastic.
- First proof – Let the dough double in size in a greased bowl for 1.5 to 2 hours.
- Shaping – Shape the dough into a cylinder and cut into pieces.
- Second proof – Let the dough rise in a baking pan for 1 to 1.5 hours.
- Baking – Preheat oven to 350F, brush dough with egg wash, bake for 35-40 minutes.
- Glazing & serving – Brush bread with condensed milk glaze when done baking, then let it cool before serving.
Notes
- If using AP flour instead of cake flour, adjust the measurements accordingly.
- Store bread in plastic wrap at room temperature for up to 3 days.
- Leftover bread is great for making bread pudding.
