Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Filling:

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup eggnog
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon

For Garnish (optional):

  • Whipped cream
  • Ground nutmeg or cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking dish to prepare for baking.
  2. Prepare Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Stir the ingredients together until they are thoroughly mixed.
  3. Press Crust: Firmly press the crust mixture evenly into the bottom of the prepared baking dish to create a solid base layer.
  4. Bake Crust: Bake the crust in the preheated oven for 10 minutes. After baking, remove it from the oven and allow it to cool slightly before adding the filling.
  5. Mix Filling: In a large bowl, beat the softened cream cheese with sugar until smooth and creamy. Then add eggnog, eggs, vanilla extract, ground nutmeg, and ground cinnamon. Mix until all ingredients are fully combined and the batter is smooth.
  6. Pour Filling: Pour the eggnog cheesecake filling evenly over the pre-baked crust, spreading it to cover the surface uniformly.
  7. Bake Cheesecake: Return the dish to the oven and bake for 30 to 35 minutes or until the center is set but still slightly jiggly when shaken gently.
  8. Cool Bars: Remove the cheesecake bars from the oven and let them cool at room temperature for 15 to 20 minutes. Then refrigerate for at least 2 hours to chill completely and firm up for easy slicing.
  9. Cut into Bars: Once fully chilled, cut the cheesecake into squares or bars to serve.
  10. Garnish: Optionally, top each bar with whipped cream and a sprinkle of ground nutmeg or cinnamon for a festive presentation before serving.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • Do not overbake the cheesecake to avoid cracking; a slightly jiggly center is perfect.
  • For best flavor, chill the bars overnight before serving.
  • Garnishes are optional but add a lovely festive touch and extra creaminess.
  • Use fresh eggnog for the richest taste; homemade or store-bought both work well.
