Ingredients

Scale

Base Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (8 oz) block cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste

Additional Mix-ins

  • ½ cup chopped green onions
  • ½ cup diced red bell pepper
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Prepare the Corn: If using fresh corn, cut the kernels off the cob. For canned corn, drain and rinse thoroughly. If using frozen corn, thaw completely and drain any excess moisture to avoid watery dip.
  2. Mix the Creamy Base: In a large mixing bowl, combine the sour cream, mayonnaise, and softened cream cheese. Use a hand mixer or vigorous stirring to achieve a smooth, creamy consistency without lumps.
  3. Add Cheeses and Seasonings: Stir in the shredded cheddar and pepper jack cheeses. Then add garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Mix well to combine all flavors evenly.
  4. Incorporate Vegetables: Fold in the prepared corn kernels, chopped green onions, diced red bell pepper, and finely chopped jalapeño. Add chopped cilantro if desired, mixing until everything is evenly distributed.
  5. Serve Cold: For a chilled dip, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with extra green onions, cheese, or cilantro before serving.
  6. Serve Hot: To serve warm, preheat your oven to 375°F (190°C). Transfer the dip mixture to a baking dish, top with additional shredded cheese, and bake for 20–25 minutes until bubbly and golden brown. Garnish with crumbled bacon and fresh cilantro if desired before serving.

Notes

  • Mexican Street Corn Dip: For a vibrant twist, replace mayonnaise with Mexican crema, add crumbled cotija cheese, and sprinkle generously with Tajín seasoning to evoke the flavors of elote.
  • Spicy Kick: Enhance the heat by mixing in extra diced jalapeños, a splash of your favorite hot sauce, or a pinch of cayenne pepper. This adds excitement without overpowering the creaminess.
