  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 23 tbsp sugar (or maple syrup)
  • 2 tbsp rice vinegar
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves minced garlic (optional)

Instructions

  1. Prepare the Sauce: In a mixing bowl, combine water or vegetable broth, soy sauce, dark soy sauce if using, corn starch, sugar or maple syrup, rice vinegar, ground pepper, chili garlic sauce, sesame oil, and minced garlic if desired. Stir well and set the sauce aside to let the flavors meld.
  2. Cook the Noodles: Boil water in a small pot and cook the ramen noodles for about 2-3 minutes less than package instructions to keep them slightly firm. Drain the noodles and set them aside.
  3. Sauté Protein and Vegetables: In a pan over medium-high heat, sauté the tofu and/or chosen vegetables and mushrooms until they are cooked through and nicely tender, usually about 5-7 minutes.
  4. Add Sauce and Simmer: Pour the prepared sauce into the pan with the cooked protein and veggies. Simmer the mixture for about 2-3 minutes, allowing the sauce to thicken and coat everything evenly.
  5. Combine Noodles and Sauce: Add the drained noodles to the pan, toss thoroughly to coat the noodles with the sauce, and cook for an additional 3 minutes. This step ensures the noodles absorb the sauce flavors.
