For the Ground Turkey:

  • 1 lb ground turkey
  • 3 tbsp taco seasoning

For the Rice:

  • 2 cups rice (cooked)
  • 1/2 lime (juiced)
  • 23 tbsp cilantro (chopped)

Additional Toppings:

  • 1 cup black beans
  • 2 cups cherry tomatoes (quartered)
  • 1 avocado (sliced)
  • 1 cup Monterey jack or cheddar cheese (shredded)
  • Greek yogurt taco sauce (to taste)
  • additional cilantro (to taste)
  • additional lime juice (to taste)
  • salsa
  • jalapeños
  • tortilla chips

Instructions

  1. Brown the Ground Turkey: Heat a large non-stick skillet on medium heat and brown ground turkey with taco seasoning. Remove from heat when browned.
  2. Make Cilantro Lime Rice: Mix cooked rice with lime juice, chopped cilantro, salt, and black pepper.
  3. Assemble the Bowl: In each serving bowl, layer greens, ground turkey, cilantro lime rice, avocado, black beans, cheese, and cherry tomatoes.
