Ingredients

Scale

Protein and Seasoning

  • 1 lb ground beef
  • 1 package taco seasoning

Vegetables & Beans

  • 1 head iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 can (15 oz) black beans, drained and rinsed

Dairy & Crunch

  • 1 cup shredded cheddar cheese
  • 1 bag (9.75 oz) Doritos, any flavor (Nacho Cheese preferred)

Dressings & Garnishes

  • 1 cup salsa
  • 1 cup sour cream
  • Optional garnishes: sliced black olives, jalapeños, cilantro

Instructions

  1. Cook the Meat: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat. Stir in the taco seasoning and the amount of water recommended on the seasoning package. Simmer for about 5 minutes until the mixture is well combined and slightly thickened. Remove from heat and set aside to cool slightly.
  2. Prepare the Salad Base: In a large salad bowl, combine the chopped iceberg lettuce, halved cherry tomatoes, diced bell pepper, finely chopped red onion, and drained black beans. Toss gently to mix the vegetables and beans evenly.
  3. Assemble the Salad: Once the meat has cooled, add it to the salad bowl along with the shredded cheddar cheese. Crush the Doritos into bite-size pieces and add them to the bowl.
  4. Add Dressings and Serve: Just before serving, add salsa and sour cream to the salad. Toss everything gently until all ingredients are evenly coated with the dressings. Garnish with sliced black olives, jalapeños, and cilantro if desired.
  5. Serve Immediately: Enjoy the salad fresh to ensure the Doritos maintain their crisp texture and the salad is vibrant in flavor.

Notes

  • Use ground turkey or chicken as a leaner alternative to beef.
  • Substitute ranch or a zesty homemade salsa for the dressing to vary flavor.
  • Add avocado slices, corn, or beans for extra texture and nutrition.
  • This salad is best enjoyed immediately after assembling to keep the Doritos crunchy.
