  • 1/2 yellow bell pepper (cut into 1 inch pieces)
  • 1/2 red bell pepper (cut into 1 inch pieces)
  • 1/2 cup carrots (shredded)

Sauce & Seasonings

  • 1/2 tsp ground ginger
  • 2 tsp minced garlic
  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until smooth. Set aside to allow flavors to meld.
  2. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and sauté for 3-5 minutes until browned and cooked through. Remove the chicken to a separate plate.
  3. Sauté the vegetables: Reduce the heat slightly to medium-high and add the remaining tablespoon of olive oil to the skillet. Add the broccoli florets, yellow and red bell peppers, and shredded carrots. Cook, stirring occasionally, until the vegetables are tender yet still crisp.
  4. Add aromatics: Stir in the ground ginger and minced garlic, cooking for 1-2 minutes until the garlic becomes fragrant and aromatic.
  5. Combine chicken and sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir well to coat all ingredients evenly. Bring the mixture to a boil, stirring occasionally, and allow it to boil for 1 minute to thicken the sauce.
