Zucchini Casserole:
- 4 cups Zucchini, diced into 1-inch pieces
- 1 cup Mayonnaise
- 1 cup Shredded Cheddar Cheese
- 2 Eggs, slightly beaten
- 1 tsp Pepper
- 3/4 – 1 tsp Garlic Powder
Topping:
- 1/4 cup Panko Breadcrumbs
- 1 Tbsp Butter, melted
- Parboil Zucchini: To a pot of boiling water, add the diced zucchini and cook for 3 minutes. Drain and cool.
- Mix Ingredients: In a bowl, combine the parboiled zucchini, mayonnaise, cheddar cheese, eggs, pepper, and garlic powder.
- Transfer to Baking Dish: Pour the mixture into a greased 1 1/2 quart baking dish.
- Add Topping: In another bowl, combine the Panko breadcrumbs with melted butter. Sprinkle the breadcrumb mixture over the top of the casserole.
- Bake: Bake the casserole, uncovered, at 350°F for 35 minutes or until the zucchini is fork-tender.
