    Zucchini Casserole:

  • 4 cups Zucchini, diced into 1-inch pieces
  • 1 cup Mayonnaise
  • 1 cup Shredded Cheddar Cheese
  • 2 Eggs, slightly beaten
  • 1 tsp Pepper
  • 3/41 tsp Garlic Powder
  • Topping:

  • 1/4 cup Panko Breadcrumbs
  • 1 Tbsp Butter, melted

Instructions

  1. Parboil Zucchini: To a pot of boiling water, add the diced zucchini and cook for 3 minutes. Drain and cool.
  2. Mix Ingredients: In a bowl, combine the parboiled zucchini, mayonnaise, cheddar cheese, eggs, pepper, and garlic powder.
  3. Transfer to Baking Dish: Pour the mixture into a greased 1 1/2 quart baking dish.
  4. Add Topping: In another bowl, combine the Panko breadcrumbs with melted butter. Sprinkle the breadcrumb mixture over the top of the casserole.
  5. Bake: Bake the casserole, uncovered, at 350°F for 35 minutes or until the zucchini is fork-tender.
