Rolled Oats:

  • 2 cups (180 g) rolled oats

Whole Wheat Flour:

  • 1 cup (120 g) whole wheat flour

Unsweetened Applesauce:

  • 1 cup (240 g) unsweetened applesauce

Honey or Maple Syrup (optional):

  • 12 Tbsp honey or maple syrup

Egg (or flax “egg”):

  • 1 large egg or 1 Tbsp ground flax + 3 Tbsp water

Baking Soda:

  • 1 tsp baking soda

Ground Cinnamon:

  • 1½ tsp ground cinnamon

Vanilla Extract:

  • 1 tsp pure vanilla extract

Sea Salt:

  • 1/2 tsp fine sea salt

Optional Mix-Ins:

  • Up to ½ cup of nuts, seeds, dried fruit, or dark chocolate

Instructions

  1. Mix Dry Ingredients In a large bowl, whisk together rolled oats, whole wheat flour, baking soda, salt, and cinnamon.
  2. Combine Wet Ingredients In a separate bowl, whisk applesauce, egg, vanilla extract, and honey or maple syrup.
  3. Merge & Fold Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in optional mix-ins if desired.
  4. Portion & Bake Use a scoop to portion dough onto baking sheets and bake at 175°C for 12–14 minutes.
  5. Cool & Enjoy Let cookies cool before storing in an airtight container.

  • For a vegan version, use a flax “egg” and skip honey.
