Ingredients

Scale

Meat

  • 1 pound ground beef, browned and drained

Vegetables and Beans

  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 1 can kidney beans, drained (15.25 ounces)
  • 1 can black beans, drained (15 ounces)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can sweetcorn, drained (15.5 ounces)

Liquids and Sauces

  • 2 cups beef broth
  • 6 ounces tomato paste
  • 1 tablespoon liquid smoke (optional)

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Prepare Ingredients: Brown the ground beef in a skillet, then drain the excess fat. Dice the onion and green bell pepper. Drain the kidney beans, black beans, and sweetcorn from their cans.
  2. Add to Crockpot: Place the browned ground beef, diced vegetables, drained beans, diced tomatoes, sweetcorn, beef broth, tomato paste, and all spices including chili powder, paprika, minced garlic, cumin, salt, and black pepper into the crockpot. Optionally add the liquid smoke for a smoky flavor. Stir well to combine all ingredients evenly.
  3. Cook: Cover the crockpot with its lid and cook on high for about 4 hours or on low for 6 hours, until the vegetables are tender and the flavors have fully developed and blended together.
  4. Serve: Stir the soup once more before ladling into bowls. Enjoy your hearty Crockpot Cowboy Soup hot.

Notes

  • For a smokier flavor, be sure to add the liquid smoke, but it is optional.
  • You can substitute ground turkey or chicken for a leaner version.
  • Beans can be swapped or added to your preference (e.g., pinto beans).
  • Adjust seasoning at the end if necessary, especially salt and chili powder for heat level.
  • This soup freezes well for up to 3 months. Reheat gently on the stovetop.
