  • 10.5 ounces cream of mushroom soup
  • 10.5 ounces cream of chicken soup
  • 14.5 ounces beef broth (can substitute with chicken broth)
  • 2 cups sliced mushrooms
  • ½ medium yellow onion, sliced

Instructions

  1. Prepare Seasoning Mix: In a small bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, and dried parsley to create a flavorful seasoning blend.
  2. Slice Vegetables: Clean the mushrooms with a damp cloth and slice them. Slice the half medium yellow onion thinly and set aside.
  3. Sear Pork Chops: Heat olive oil in a large frying pan over medium-high heat. Pat the pork chops dry with paper towels to remove moisture. Sprinkle the seasoning mixture evenly on both sides of the chops, reserving some seasoning for later use in the gravy. Place chops in the hot skillet and sear for about three minutes per side until nicely browned. Remove chops and set aside on a plate.
  4. Layer in Crock Pot: Place the sliced onions and mushrooms in the bottom of the crock pot. Lay the seared pork chops on top of the vegetables.
  5. Make Gravy: Using the same skillet, add cream of mushroom soup, cream of chicken soup, and beef broth. Whisk over medium heat until well combined and smooth. Stir in the remaining seasoning mixture to enhance the gravy flavor.
  6. Combine and Slow Cook: Pour the prepared sauce over the pork chops in the crock pot. Cover and cook on low heat for 5 to 6 hours, or until the pork chops are tender and fully cooked.
