Beef and Marinade

  • 200 g Rump or Sirloin steak (or any tender steak cut), thinly sliced
  • 1 Egg
  • 1 cup Corn or Potato Starch (Flour)
  • 1 tbsp Light soy sauce
  • 1 tsp Ginger garlic paste
  • 1 tsp Sesame oil
  • ½ tsp Sugar
  • ¼ tsp White pepper

Vegetables and Aromatics

  • ½ Sweet onion, sliced
  • ½ Bell pepper, sliced
  • 23 Spring onions, chopped
  • 23 Bird’s eye or hot chilies, sliced

Sauce

  • 3 tbsp Sweet chilli sauce
  • 2 tbsp Ketchup
  • 2 tbsp Light soy sauce
  • 1 tsp Vinegar (white or rice)
  • 1 tbsp Sugar
  • ½ tsp Salt

Instructions

  1. Prepare the beef and marinade: Cut the rump or sirloin steak into thin strips. In a mixing bowl, combine the beef strips with light soy sauce, ginger-garlic paste, sesame oil, sugar, and white pepper. Mix well to coat all pieces and let marinate for 15 minutes.
  2. Mix the stir-fry sauce: In a small bowl, whisk together sweet chilli sauce, ketchup, light soy sauce, vinegar, sugar, and salt. Set aside for later use.
  3. Add the egg to the beef: Crack one egg into the marinated beef strips and mix thoroughly to incorporate the egg into the beef evenly.
  4. Coat the beef: Sprinkle corn or potato starch over the beef strips, coating each piece evenly. Make sure the strips are separated to avoid clumping, and gently shake off any excess flour.
  5. Deep fry the beef: Heat oil in a deep fryer or large pan to about 350°F (175°C). Carefully add the coated beef strips in batches and deep fry for 1-2 minutes until they turn crispy and golden brown.
  6. Drain excess oil: Remove the fried beef from the oil and place on paper towels or a cooling rack to absorb excess oil and keep crisp.
  7. Stir-fry vegetables: Heat a wok or large pan over medium-high heat. Add a tablespoon of oil, then quickly stir-fry the sliced sweet onion for a few seconds. Add bell pepper slices and continue to stir-fry until slightly tender yet still crisp.
  8. Combine beef and sauce: Return the crispy beef strips to the wok, pour the prepared sauce mixture over the ingredients, then add chopped spring onions and sliced fresh chilies. Stir-fry everything together rapidly on high heat for 1-2 minutes to combine and heat through.
  9. Serve immediately: Transfer the crispy chilli beef to a serving plate ensuring it retains its crunch and vibrant colors.
