Pasta:
- 12 oz fettuccine or linguine
Salmon:
- 1 lb salmon fillet, cubed
Sauce:
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup Parmesan cheese, grated
- Salt and pepper, to taste
- Cook Pasta: Prepare pasta according to package instructions. Drain and set aside.
- Sear Salmon: In a skillet, heat olive oil over medium heat. Sear salmon cubes for 2–3 minutes per side until cooked through. Remove and set aside.
- Make Sauce: In the same skillet, sauté garlic until fragrant. Add heavy cream, broth, sun-dried tomatoes, and Parmesan. Simmer until slightly thickened.
- Finish Dish: Stir in spinach until wilted. Return salmon to the pan and toss with cooked pasta. Serve hot.
