Pasta:

  • 12 oz fettuccine or linguine

Salmon:

  • 1 lb salmon fillet, cubed

Sauce:

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Cook Pasta: Prepare pasta according to package instructions. Drain and set aside.
  2. Sear Salmon: In a skillet, heat olive oil over medium heat. Sear salmon cubes for 2–3 minutes per side until cooked through. Remove and set aside.
  3. Make Sauce: In the same skillet, sauté garlic until fragrant. Add heavy cream, broth, sun-dried tomatoes, and Parmesan. Simmer until slightly thickened.
  4. Finish Dish: Stir in spinach until wilted. Return salmon to the pan and toss with cooked pasta. Serve hot.
