Main Ingredients:
- 1 medium spaghetti squash
- 1 tbsp olive oil
- ½ cup diced onion
- 2 cloves garlic, minced
- ½ cup plain Greek yogurt (or sour cream)
- 1½ cups shredded sharp cheddar cheese, divided
- ¼ tsp salt
- ¼ tsp black pepper
Optional Flavor Additions:
- Roast the squash: Preheat oven to 400°F. Cut spaghetti squash in half lengthwise, scoop out seeds, brush with olive oil, and roast cut-side down for 35–40 minutes.
