Main Ingredients:

  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • ½ cup plain Greek yogurt (or sour cream)
  • 1½ cups shredded sharp cheddar cheese, divided
  • ¼ tsp salt
  • ¼ tsp black pepper

Optional Flavor Additions:

  • ¼ tsp paprika or thyme

Instructions

  1. Roast the squash: Preheat oven to 400°F. Cut spaghetti squash in half lengthwise, scoop out seeds, brush with olive oil, and roast cut-side down for 35–40 minutes.
  2. Prep the filling: Sauté onions in olive oil until soft. Add garlic and cook briefly. Remove from heat.
  3. Shred and mix: Use a fork to shred the cooled squash into strands. Combine with onions, Greek yogurt, 1 cup cheese, salt, pepper, and optional spices.
  4. Bake: Transfer mixture to a greased dish, top with remaining cheese, and bake at 375°F for 20–25 minutes.
  5. Serve & savor: Allow to cool slightly before enjoying the creamy and savory gratin.
