Dough:

  • 1 cup unsalted butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 tsp orange zest
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp ground ginger
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups + 2 tbsp Bob’s Red Mill All Purpose Flour (spooned and leveled)
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries

Frosting:

  • 8 oz cream cheese, softened to room temperature
  • 1 1/22 cups powdered sugar
  • 1/4 tsp vanilla extract
  • 1/2 cup dried cranberries (chopped)
  • 1/2 cup melted white chocolate chips

Instructions

  1. Preheat oven: Preheat oven to 350˚F and line a 9×13” baking dish with parchment paper.
  2. Melt butter: Add butter to a small pot and melt over low heat. Whisk together brown sugar and melted butter in a large bowl.
  3. Add wet ingredients: Add in the eggs, orange zest, and vanilla. Whisk until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk ginger, baking powder, salt, and flour. Add to wet mixture, stirring until combined. Stir in white chocolate and cranberries.
  5. Bake: Spread dough in pan, bake for 22-24 mins until golden. Do not overbake.
  6. Make frosting: Beat cream cheese, add powdered sugar and vanilla. Adjust sugar for desired consistency. Spread on cooled bars.
  7. Decorate: Top with chopped cranberries and drizzle with white chocolate. Slice and refrigerate.

  • You can customize the sweetness of the frosting to your preference by adjusting the amount of powdered sugar.
  • For a festive touch, sprinkle some orange zest on top before serving.
