A warm and comforting Tuscan Ravioli Soup recipe that combines the flavors of cheese and spinach stuffed ravioli with a rich, creamy broth and fresh vegetables.

Ingredients

Main Soup Ingredients:

  • 1 Tbsp Extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 (8 oz.) package cheese + spinach stuffed ravioli
  • 4 cups vegetable stock, organic

Creamy Base:

  • 2 Tbsps organic all-purpose flour
  • 1 cup organic heavy cream

Vegetables and Seasonings:

  • 1 cup organic kale, chopped
  • 12 Tbsps organic tomato paste
  • 1 1/2 Tbsps Tuscan Marry Me Blend
  • 1 tsp sea salt
  • 2 cups cherry or grape tomatoes, halved or whole
  • 1/2 lemon, freshly-squeezed

Serving:

  • Freshly grated parmesan cheese

Instructions

  1. TO MAKE THE SOUP: In a medium-sized dutch oven pot over medium-high heat, add the olive oil. Once heated, add the minced garlic and tomatoes, and sauté until translucent and fragrant, about 1-2 minutes. Add the Tuscan Marry Me blend, stirring until combined. Add the tomato paste and flour and continue to stir until combined.
  2. Add in the vegetable stock, stirring frequently to avoid lumping until thickened. Add in the ravioli, tomatoes, lemon juice, heavy cream, and kale, stirring to combine. Let everything simmer for another 8-10 minutes or until the soup has thickened nicely and the ravioli are fully cooked through and tender. NOTE: When ravioli are cooked through, they’ll float to the top and swell in size.
  3. Remove from heat and serve immediately into prepared bowl(s), top with freshly-grated parmesan, and with a side of bread, if desired.

Notes

  • For a lighter version, you can use half-and-half or milk instead of heavy cream.
  • Feel free to customize with additional vegetables like zucchini or spinach.
