Instructions

  1. Cook Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  2. Sauté Onions and Garlic: Add the diced onion to the bacon drippings and sauté until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Brown Potatoes: Add the diced baby potatoes to the skillet and cook, stirring occasionally, for 5–7 minutes until they start to brown.
  4. Add Green Beans and Seasonings: Stir in the trimmed green beans, ranch seasoning mix, dried thyme, and dried rosemary.
  5. Simmer: Pour in the chicken broth, cover the skillet, and reduce the heat to a simmer. Cook for 15–20 minutes, or until the potatoes and green beans are tender.
  6. Finish and Serve: Stir the crispy bacon back into the dish. Season with salt and pepper to taste, then serve warm.
