Instructions

  1. Sauté the Aromatics: Heat the neutral oil in a large pot over medium heat. Add the diced onions and sauté for 5-8 minutes until they become translucent. Season with salt and pepper to enhance flavor.
  2. Add Vegetables and Split Peas: Stir in the diced celery, minced garlic, chopped fresh thyme, bay leaves, and green split peas. Cook for approximately 2 minutes until the garlic becomes fragrant, stirring occasionally to combine the ingredients.
  3. Simmer the Soup: Pour in the vegetable or vegan chicken broth, cover the pot, and reduce heat to medium-low. Let it cook for 20-25 minutes or until the split peas start breaking down, creating a creamy texture.
  4. Add Potatoes, Carrots, and Liquid Smoke: Incorporate the peeled and cubed potatoes, diced carrots, and dashes of liquid smoke into the pot. Continue cooking for another 20-25 minutes until all the vegetables are soft and the soup thickens. Add water gradually, up to 2 cups, to reach your desired consistency.
  5. Final Seasoning and Serve: Taste the soup and adjust seasoning with additional salt and pepper if needed. Remove the bay leaves before serving. Serve the soup hot for a comforting meal.
