Instructions

  1. Mix Dry Ingredients: In a medium bowl, stir together the all-purpose flour and salt until combined. Set aside this mixture for later incorporation into your dough.
  2. Cream Butter and Sugar: In a large mixing bowl, use an electric hand mixer or stand mixer to beat the softened butter on medium speed until very creamy and smooth. Add the granulated sugar and continue beating until the mixture becomes light and fluffy, about 3-4 minutes.
  3. Add Egg and Vanilla: Beat in the large egg and vanilla extract until the mixture is well combined. Gradually add the flour mixture, mixing on low speed just until incorporated. The dough will be crumbly but should hold together when squeezed; a few dry flour patches are acceptable.
  4. Divide and Flavor Dough: Divide the dough into three equal portions, approximately 400 grams each. Leave one portion plain. Add cocoa powder to one bowl and matcha powder to the other, kneading each gently with gloved hands until the color and flavor are evenly distributed.
