Lobster:
- 2 whole lobsters (about 1 1/2 lbs each)
Sauce:
- 2 tbsp butter
- 1 small onion, finely diced
- 1/4 cup dry white wine
- 1/4 cup heavy cream
- 1/4 cup fish or lobster stock
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 egg yolks, lightly beaten
