Lobster:

  • 2 whole lobsters (about 1 1/2 lbs each)

Sauce:

  • 1 small onion, finely diced
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 1/4 cup fish or lobster stock
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 egg yolks, lightly beaten
  • 1/4 cup grated Gruyère or Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp breadcrumbs (optional, for topping)

Garnish:

  • 1 tbsp chopped fresh parsley

Instructions

  1. Cook the Lobsters: Bring a pot of salted water to a boil. Cook lobsters for 8-10 minutes, then cool, extract meat, and reserve shells.
  2. Make the Sauce: Sauté onion in butter, add wine, stock, cream. Thicken slightly.
  3. Finish the Sauce: Add mustard, lemon juice, and egg yolks. Gently thicken the sauce.
  4. Assemble the Lobsters: Mix lobster meat with sauce, fill shells, top with cheese and breadcrumbs.
  5. Broil the Lobsters: Broil for 3-5 minutes until cheese is melted and golden.
