Dry Ingredients:

  • 1 cup rolled oats (or 1 cup of oat flour)
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Wet Ingredients:

  • 1 1/2 cups mashed (cooked) sweet potato (*See notes*)
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 3 large eggs
  • 2 tsp vanilla extract

Topping:

  • 1 tsp ground cinnamon
  • 1 tsp coconut palm sugar (or brown sugar)
  • 1 tbsp unsalted butter (softened)
  • 1 tsp honey

Instructions

  1. Preheat Oven: Preheat oven to 350°F and line an 8.5″ loaf pan with parchment paper.
  2. Prepare Dry Ingredients: Process oats into flour in a blender and mix with cinnamon, baking soda, and salt in a bowl.
  3. Mix Wet Ingredients: Blend sweet potato, almond butter, honey, eggs, and vanilla until smooth.
  4. Combine Wet and Dry: Mix wet and dry ingredients until fully combined.
  5. Fill Loaf Pan: Pour batter into the prepared loaf pan.
  6. Add Topping: Mix cinnamon and sugar; sprinkle on top of the loaf.
  7. Bake: Bake for about 50 minutes until a toothpick comes out clean.
  8. Cool: Allow the bread to cool before serving.
  9. Prepare Honey Butter: Whip softened butter with honey and serve with the bread.
