Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Sausage Mix: In a large bowl, thoroughly mix the sausage meat with finely diced onion, minced garlic, dried thyme, dried sage, smoked paprika, salt, pepper, and breadcrumbs if using. This combines all the flavors evenly.
  3. Prepare Pastry: Roll out your puff pastry sheet on a floured surface and cut it into two long rectangular strips to form the base for the sausage logs.
  4. Shape and Assemble: Divide the sausage mixture into two equal portions and shape each into a long log that fits the length of each pastry strip. Place the sausage logs on top of each pastry strip.
