Brownie Layer

  • 1 boxed brownie mix (Countdown’s Own Brand recommended)
  • 2 eggs
  • 80ml vegetable oil or melted butter

Fruit & Sauce

  • 300g frozen raspberries
  • 3 tbsp caster sugar
  • 250g strawberries, sliced
  • 125g fresh raspberries

Dairy & Toppings

  • 500ml cream, whipped to soft peaks
  • 600g readymade custard
  • 12 Flake chocolate bars, crumbled
  • 1 tbsp icing sugar, for dusting

Instructions

  1. Prepare Brownies: Mix the boxed brownie mix with eggs and vegetable oil according to the package instructions. Bake as directed. For convenience, you can bake the brownies the day before to save time. Allow to cool completely.
  2. Cut Brownies: Once cooled, cut the brownies into 1-inch squares and divide into three equal piles for layering in the trifle.
  3. Make Raspberry Sauce: Combine frozen raspberries and caster sugar in a microwave-safe jug. Microwave on high for 1 minute, stir, then microwave for another minute and stir again. Set the sauce aside to cool before assembling the trifle.
  4. Layer Strawberries: Place half of the sliced strawberries evenly at the bottom of a trifle dish or large serving bowl as the first layer.
  5. Add Raspberry Sauce and Brownies: Pour one-third of the cooled raspberry sauce over the strawberries. Next, add the first layer of brownie squares, then carefully spoon half of the whipped cream over the brownies to cover.
  6. Add Custard and Second Raspberry Sauce: Spread a layer of readymade custard over the whipped cream, smoothing it to the edges. Then pour another third of the raspberry sauce and add the second layer of brownies on top.
  7. Layer Strawberries and Custard: Arrange the remaining sliced strawberries over the second brownie layer, followed by the rest of the custard, smoothing it to cover the edges of the dish.
  8. Final Layers: Add the last layer of brownies and the remaining raspberry sauce, spreading it evenly.
  9. Top with Whipped Cream and Decorate: Spread the remaining whipped cream on top until smooth. Decorate with crumbled Flake chocolate bars, fresh raspberries, and a dusting of icing sugar.
  10. Chill: Refrigerate the trifle for at least 3 hours before serving to allow flavors to meld, though refrigerating overnight is preferable for best results.
