  • 1 lb green beans, stem ends trimmed

For the Stir-Fry:

  • 3 Tbsp peanut or vegetable oil (or avocado oil)
  • 6 cloves garlic, finely minced (¼ cup)
  • 1 tsp minced fresh ginger (optional)
  • 1 Tbsp chicken broth
  • 1 tsp soy sauce (or tamari for gluten-free)
  • ½ tsp salt, or to taste
  • Optional: chili flakes or sesame seeds for garnish

Instructions

  1. Prepare the Green Beans: Pat the green beans dry to help them blister better without splattering.
  2. Stir-Fry the Beans: Heat oil in a large skillet or wok over medium-high heat until shimmering. Add green beans in a single layer, sprinkle with salt, and let cook undisturbed for 2–3 minutes until one side blisters and chars.
  3. Cook the Beans: Toss and continue to cook, turning occasionally, until most beans are blistered and tender (about 3–5 minutes total).
  4. Add Garlic and Ginger: Push beans to the side, lower heat to medium, and add garlic and optional ginger. Stir-fry until fragrant, about 30 seconds.
  5. Season and Garnish: Add chicken broth, soy sauce, and Shaoxing wine, scraping up browned bits. Toss to coat beans and heat through. Taste and adjust seasoning, then transfer to a serving plate. Garnish with chili flakes or sesame seeds if desired.
