Marinated Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs
  • 4 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon pepper

Garlic Sauce:

  • 4 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/4 cup full-fat Greek yogurt
  • 1 tablespoon lemon juice

Instructions

  1. Marinated Chicken: Add chicken to a large ziplock bag along with all of the ingredients except the chopped fresh parsley. Cover and store in the refrigerator for at least 1 hour or overnight.
  2. Cooking: Preheat oven to 425°F. Place marinated chicken in a greased baking dish and bake until golden brown and cooked through, about 15 minutes. Switch the oven to Broil for 1-2 minutes for a crispy finish. Let it rest before slicing.
  3. Serving: Top with chopped fresh parsley if desired. Serve in a pita, on a salad, or over rice.
  4. Garlic Sauce: In a small bowl, combine minced garlic, mayonnaise, Greek yogurt, and lemon juice. Whisk until smooth for a creamy garlic sauce.
