Sauce:

  • 6 tablespoons brown sugar
  • 6 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons chili garlic sauce or sriracha sauce
  • Juice of 1 lime

Pad Thai:

  • 12 ounces Thai Rice Noodles
  • 1 1/2 pounds chicken breasts (sliced into thin strips)
  • 2 tablespoons oil (divided)
  • 3 eggs (beaten)
  • 1 red bell pepper (sliced thin)
  • 2 cups bean sprouts
  • 1 cup matchstick carrots
  • 2 green onions (chopped)
  • 1/4 cup Peanuts (chopped)
  • Cilantro

Instructions

  1. Mix all the sauce ingredients together in a bowl and set aside. This will be the flavorful base for your Pad Thai.
  2. Cook noodles according to package instructions. Drain and set aside.
  3. Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat and cook chicken for 4-6 minutes until done. Remove from pan and set aside. Heat 1 teaspoon oil in the skillet. Add the beaten eggs and scramble until cooked. Remove from pan.
  4. Add 2 teaspoons oil to the skillet and sauté the bell pepper for 1-2 minutes. Add the bean sprouts and carrots and cook for an additional 1-2 minutes.
  5. Combine the drained noodles, cooked chicken, eggs, and prepared sauce in the skillet. Toss everything together and cook for another minute to allow the flavors to meld.
  6. Serve the Chicken Pad Thai garnished with fresh cilantro and chopped peanuts. Enjoy your delicious homemade Pad Thai!
