Instructions

  2. Measure the Cereal: Pour 18 ounces of Crispix cereal into a large mixing bowl to have it ready for coating with the caramel mixture.
  3. Melt Butter and Start Caramel: In a tall saucepan or pot with deep sides, melt 1 cup of butter over medium-high heat. Add 2 cups packed light brown sugar and whisk continuously as the mixture comes to a boil.
  4. Add Corn Syrup and Vanilla: Once boiling, stir in 1/2 cup lite corn syrup and 1/2 teaspoon pure vanilla extract. Allow the mixture to boil again while whisking continuously to ensure even cooking.
  5. Incorporate Baking Soda: Remove the saucepan from heat and stir in 1/2 teaspoon baking soda. This will cause the caramel to foam up and double in volume, turning into a light tan color.
  6. Coat the Cereal: Immediately pour the foamy caramel mixture over the Crispix cereal in the bowl. Stir gently to evenly coat all cereal pieces with the caramel.
