Peanut Butter Balls:

  • 1 cup smooth peanut butter (240g)
  • 5 tbsp unsalted butter (70g)
  • 2 cups powdered sugar (240g)
  • 1 tsp vanilla extract (5mL)

Chocolate Coating:

  • 2 cups semisweet chocolate (340g)
  • 2 tbsp coconut oil (30mL, optional)

Instructions

  1. Cream the peanut butter and butter: In a bowl, mix peanut butter, butter, and vanilla extract until smooth.
  2. Add powdered sugar: Gradually add powdered sugar, mix until combined. Scrape down the bowl and mix again.
  3. Shape into balls: Roll mixture into tablespoon-sized balls and place on a baking sheet. Chill for at least 20 minutes.
  4. Melt chocolate: In a medium bowl, melt chocolate and coconut oil in the microwave. Stir until smooth and let cool.
  5. Dip peanut butter balls: Using a skewer, dip each peanut butter ball into the chocolate, leaving some peanut butter exposed.
  6. Chill and enjoy: Chill the Buckeyes until the chocolate sets. Remove any skewer holes as desired before serving.

Notes

  • You can refrigerate the Buckeyes for longer storage.
  • Feel free to adjust the sweetness by adding more or less powdered sugar.
