Peanut Butter Balls:
- 1 cup smooth peanut butter (240g)
- 5 tbsp unsalted butter (70g)
- 2 cups powdered sugar (240g)
- 1 tsp vanilla extract (5mL)
Chocolate Coating:
- 2 cups semisweet chocolate (340g)
- 2 tbsp coconut oil (30mL, optional)
- Cream the peanut butter and butter: In a bowl, mix peanut butter, butter, and vanilla extract until smooth.
- Add powdered sugar: Gradually add powdered sugar, mix until combined. Scrape down the bowl and mix again.
- Shape into balls: Roll mixture into tablespoon-sized balls and place on a baking sheet. Chill for at least 20 minutes.
- Melt chocolate: In a medium bowl, melt chocolate and coconut oil in the microwave. Stir until smooth and let cool.
- Dip peanut butter balls: Using a skewer, dip each peanut butter ball into the chocolate, leaving some peanut butter exposed.
- Chill and enjoy: Chill the Buckeyes until the chocolate sets. Remove any skewer holes as desired before serving.
