Bread machine Pretzel Bites Recipe

4.9 from 29 reviews

These bread machine pretzel bites are soft, chewy, and perfectly golden treats made from scratch with an easy dough recipe. Using a bread machine simplifies the mixing and kneading process, while a quick baking soda water bath gives the bites their signature pretzel crust. Perfect as a snack or appetizer, they can be customized with an egg wash for a shiny finish and served warm with your favorite dipping sauces.

Ingredients

Scale

Dough

  • 1 1/8 cup warm water
  • 3 cups all-purpose flour or bread flour
  • 3 tbsp brown sugar
  • 1 1/2 tsp instant yeast

Baking Soda Water Bath

  • 2 quarts HOT water
  • 1/2 cup baking soda

Optional Toppings

  • 1 egg (for egg wash)
  • 1 tbsp water (for egg wash)
  • Coarse salt for sprinkling
  • Melted butter for brushing after baking

Instructions

  1. Prepare the dough in the bread machine: Add the warm water to your bread machine first, then the flour, brown sugar, and instant yeast. Make sure the yeast does not come in direct contact with the water initially. Set the machine to the ‘dough’ setting to mix and knead the dough. This usually takes about 1.5 hours including the rise.
  2. Shape the dough into pretzel bites: When the dough cycle is complete, turn the dough out onto a lightly floured surface and divide it into 6 equal sections. Roll each section into a rope approximately 1 inch thick. Cut these ropes into 1-2 inch pieces to form the pretzel bites.
  3. Prepare the baking soda water bath: In a large bowl, combine 2 quarts of hot water with 1/2 cup baking soda, stirring until dissolved. Use a large slotted spoon to dip 3-4 of the pretzel bites into this bath for 10-15 seconds to create that classic pretzel crust.
  4. Preheat oven and prepare bites for baking: Preheat your oven to 425°F (220°C). Place the pretzel bites on a parchment-lined baking sheet after their bath. Optional: Brush each with a mixture of 1 beaten egg and 1 tbsp water for a shiny, golden crust. Sprinkle with coarse salt.
  5. Bake the pretzel bites: Bake in the preheated oven for 8-10 minutes or until golden brown and puffed.
  6. Finish and serve: Once baked, brush the tops of the pretzel bites with melted butter for added flavor and softness. Serve warm with your favorite dipping sauces such as mustard, cheese dip, or honey mustard.

Notes

  • If you don’t have a bread machine, you can make the dough by hand or using a stand mixer with a dough hook as described: mix warm water and yeast, let it activate, then add flour and sugar, knead, and let rise.
  • The baking soda bath is key for achieving the traditional pretzel flavor and chewy crust, so do not skip this step.
  • Using bread flour instead of all-purpose flour will give a chewier texture.
  • You can add toppings like sesame seeds, poppy seeds, or cinnamon sugar after the baking soda bath for variety.
  • Make sure the baking soda bath water is hot but not boiling to prevent over-softening the dough bites.
  • Store leftover pretzel bites in an airtight container for up to 2 days or freeze for longer storage.
