For the Blueberry Cake

  • 3 large eggs, room temperature
  • 3 cups cake flour (342g)
  • 2 teaspoons baking powder (8g)
  • ½ teaspoon baking soda (3g)
  • ½ teaspoon salt (3g)
  • 1 cup sour cream (227g)
  • 1 ½ cups blueberries, pureed and cooked (198g)
  • ¼ cup vegetable oil (54g)
  • * Pink Coloring Gel – Optional
  • ½ cup whole blueberries (66g)

For the Lemon Cream Cheese Buttercream

  • 3 sticks unsalted butter, slightly softened (339g)
  • 8 oz cream cheese, softened (226g)
  • ¼ cup lemon juice (57g)
  • Zest of 1 lemon
  • 7 ½ cups powdered sugar (863g)

Instructions

  1. For the Blueberry Cake – Prepare blueberries, preheat oven, mix dry ingredients, blend wet ingredients, combine and bake.
  2. Lemon Cream Cheese Buttercream – Mix butter, cream cheese, powdered sugar, lemon juice, zest until smooth and creamy.

Notes

  • Thaw frozen blueberries before pureeing.
  • Reduce blueberries until ¾ cup.
  • Cool reduced blueberries before using.
