Biscuit Topping:

  • 2 7.5 ounce cans refrigerated biscuits or homemade biscuit dough

Instructions

  1. Preheat Oven: Heat oven to 350 degrees. Grease a 13 x 9-inch glass pan with oil cooking spray.
  2. Brown Sausage: In a medium pot, brown the sausage. Transfer the cooked sausage to the prepared baking dish and blot out any excess grease.
  3. Make Roux: In the same pot, add butter to the sausage drippings and melt over medium heat. Stir in flour, salt, and peppers to create a roux. Cook for 2-3 minutes until lightly browned.
  4. Add Milk: Gradually add milk to the roux, whisking until smooth. Cook over medium-low heat, stirring often, until thickened, for several minutes.
  5. Assemble Casserole: Pour the gravy over the sausage in the baking pan. Cut the refrigerated biscuits into quarters or use homemade biscuit dough, dividing it into small portions. Arrange the biscuit pieces on top of the gravy.
