Potatoes:

  • 2 large baking potatoes

Seasonings:

  • 1 200g block of feta
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil

Instructions

  1. Preheat Oven: Preheat your oven to 200C | 390F.
  2. Prepare Potatoes: Wash and cube the potatoes, par-boil them for 6-8 minutes, then drain and steam dry for 2-3 minutes.
  3. Season Potatoes: Add the potatoes to a baking dish with thyme, oregano, salt, pepper, olive oil, and stir to coat.
  4. Roast Potatoes: Roast the potatoes for 30-40 minutes until golden and almost cooked.
  5. Add Feta: Place feta in the middle of the tray, squeeze lemon over it.
  6. Prepare Garlic: Remove garlic from the dish, squeeze out of skins, and mash.
  7. Continue Baking: Return the dish to the oven for another 15 minutes.
  8. Combine Ingredients: Stir garlic mixture, lemon juice, and fresh basil into the potatoes and feta.
  9. Final Touches: Drizzle honey and shredded basil over the dish.
  10. Serve: Serve and enjoy!
