Instructions

  1. Thaw and Roll Puff Pastry: Let the puff pastry sheet sit at room temperature for 1 to 2 hours until softened. Then, gently roll it out slightly to prepare for shaping.
  2. Cut Pastry Circle: Using a plate or a round cutter as a guide, cut an 8 to 9 inch circle from the puff pastry. Save the scraps for other uses like mini tarts.
  3. Prepare Cheese and Egg Wash: Place the whole Brie wheel, with rind on, in the center of the pastry circle. Beat the egg with a teaspoon of water to make an egg wash. Brush the edges of the pastry with this egg wash to help seal.
  4. Wrap the Brie: Carefully fold the edges of the puff pastry around the Brie, pleating and pressing to seal the cheese completely inside the pastry.
  5. Chill before Baking: Place the wrapped Brie on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up the pastry and cheese for better baking results.
  6. Preheat Oven and Bake: Preheat your oven to 425°F (220°C). Brush the outside of the pastry with the egg wash again and bake for 20 to 25 minutes, or until the pastry is puffed and golden brown.
