Manicotti Noodles:

  • 1012 manicotti noodles, cooked al dente

For the Sauce:

  • 6 Tbsp Olive Oil
  • 1 large clove garlic, finely minced or put through a press
  • 1 medium onion, minced
  • 2 Tbsp dried parsley
  • 2 15 oz cans diced tomatoes
  • 2 8 oz cans tomato sauce
  • ½ tsp dried basil
  • 1 tsp salt
  • dash of pepper

Filling:

  • 15 oz container Ricotta Cheese
  • ¼ pound Mozzarella cheese, grated (about 1 cup)
  • 3 Tbsp Parmesan cheese
  • 1 egg
  • 1 Tbsp dried parsley
  • 2 tsp sugar
  • ½ tsp salt
  • ⅛ tsp pepper
  • More Parmesan Cheese for topping

Instructions

  1. Cook Manicotti Noodles: Cook manicotti noodles al dente according to package directions. Drain and set aside without overlapping.
  2. Make the Sauce: Heat olive oil, sauté onion, garlic, and parsley. Add diced tomatoes, tomato sauce, basil, salt, and pepper. Simmer for 25-30 minutes.
  3. Prepare Filling: Combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, parsley, sugar, salt, and pepper in a bowl.
  4. Assemble: Pour half of the sauce in a baking dish. Fill each noodle with the cheese mixture and place in the dish. Pour the remaining sauce over the noodles.
  5. Bake: Cover with foil and bake at 400°F for 40 minutes. Remove foil, sprinkle with Parmesan cheese, and bake for an additional 5 minutes.
  6. Serve: Serve hot and enjoy!
