  • ¾ teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients:

  • ½ cup unsalted butter, softened (one stick)
  • 1 ½ cups sugar
  • 1 15-ounce container whole milk ricotta cheese
  • 2 large eggs
  • 1 teaspoon almond extract

For Topping:

  • ½ cup almonds, finely chopped
  • ¼ cup sliced almonds
  • 1 tablespoon powdered sugar
  • 1 tablespoon butter, softened
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat and Prep: Preheat oven to 350 degrees. Grease a 9-inch springform pan with butter and coat with powdered sugar. Set aside.
  2. Mix Dry Ingredients: In a medium bowl, whisk flour, baking powder, and salt.
  3. Cream Wet Ingredients: In a large bowl, cream butter, sugar, and ricotta cheese. Add eggs and almond extract. Mix in the flour mixture and fold in chopped almonds.
  4. Bake: Pour batter into the prepared pan and bake for 45-55 minutes until a toothpick comes out clean. Cool in the pan before transferring to a wire rack.
  5. Top and Serve: Sprinkle sliced almonds on the cake. Dust powdered sugar over the top before serving.
