Instructions

  2. Form the Balls: Using a medium cookie scoop, portion the chicken mixture onto a baking sheet and roll each portion into smooth 2-inch balls. This helps ensure uniform cooking and crispy coating.
  3. Coat the Chicken Bites: Set out three separate dishes – one with flour, one with the beaten eggs, and one with crushed cornflakes. Working with about 6 balls at a time, dip each ball first into the flour to coat evenly, then into the beaten eggs, and finally roll it in the crushed cornflakes to fully coat.
