For Garnish

  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. Sauté onion: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  2. Add aromatics: Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
  3. Combine sweet potatoes and tomatoes: Add cubed sweet potatoes and canned tomatoes to the pot. Cook for 2–3 minutes to blend the flavors.
  4. Simmer broth and potatoes: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer for 15–20 minutes, or until the sweet potatoes are tender.
  5. Incorporate peanut butter: In a separate bowl, mix some hot broth from the pot with the peanut butter until smooth. Stir this peanut mixture back into the soup pot.
  6. Continue simmering: Simmer the soup for another 5–10 minutes, stirring occasionally to combine flavors.
  7. Add greens: Stir in the chopped kale or collard greens and cook until the greens are wilted, about 5 minutes.
  8. Season: Season the soup with salt, black pepper, and chili flakes to your taste.
  9. Serve and garnish: Ladle the soup into bowls and garnish with chopped cilantro and chopped peanuts before serving.
